Prepare a mixture in a bowl with 1/2 glass of EVOO, salt, black pepper, garlic to taste, rosemary, thyme, zest and lemon juice. Leave the mixture 10 minutes in the fridge.
Preheat the oven to 200º. Place the duck in a baking dish and paint it with the previous mixture.
Every 15 minutes you turn the duck and paint it with the mixture.
At 45 minutes you add the leek, carrots and sliced apples.
After 15 minutes you turn off the oven and leave it in for another 15 minutes. It will depend on the oven and the weight of the piece.
